Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid so the frozen sherbet holds a firm, smooth texture.
Sugar
Adds sweetness and softens the icy texture of the frozen mixture.
Lemon juice
Adds acidity that brightens the flavour of the currant juice.
Currant juice
Provides the main fruit flavour and liquid base of the sherbet.

The step that matters

Dissolving the gelatin. Gelatin must be fully dissolved in boiling water and stirred evenly into the mixture; undissolved granules leave a grainy, rubbery texture in the frozen sherbet.
