Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the beaten egg whites, sugar, lemon extract, sweet milk, lard, baking powder, salt, and dissolved carbonate of ammonia. Mix the ingredients until very stiff.

Bake

  1. Drop spoonfuls of the mixture onto a baking sheet.

  2. Bake in the preheated oven until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten whites trap air, giving the crackers lift and a light, crisp structure.
Sugar
Adds sweetness and helps the crackers brown as they bake.
Lard
Fat that tenderises the crackers and adds richness to the texture.
Baking powder
Releases gas when heated, helping the crackers rise and become airy.
Carbonate of ammonia
Leavening agent that produces gas as it bakes, adding lightness and crispness.

The step that matters

Mix until very stiff. Beating the mixture until very stiff traps air that expands in the oven. Under-mixing leaves the crackers dense rather than light and crisp.
