Banana Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the eggs and mix well.

  4. Stir in the sweet milk and banana extract.

  5. In another bowl, combine the flour and baking powder, then gradually add to the wet mixture.

  6. Divide the batter into two greased cake pans.

Bake and assemble

  1. Bake for 25-30 minutes or until a toothpick comes out clean.

  2. Once cooled, layer the cakes with thinly sliced bananas, lemon juice, powdered sugar, and whipped cream.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as the cake sets in the oven.
Butter
Creams with the sugar to add fat, tenderness and a rich texture.
Flour
Forms the main structure of the cake crumb as it bakes.
Baking powder
Releases gas in the batter so the cakes rise and turn light.
Sugar
Sweetens the cake and helps it brown and keep moisture.
Bananas
Add fruit flavour and moisture between the cake layers.

The step that matters

Dividing and baking the batter. Batter should be spread evenly between the pans so both layers bake at the same rate. Baking powder starts working once wet and dry mixtures combine, so the batter should go into the oven promptly. Checking with a toothpick confirms the centre is set and not wet.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, butter, milk, flour, banana, cream):

  1. Vanillafits better
  2. Figfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, egg, butter, milk, flour, banana, cream. Candidates are from the same food group and used in at least 100 recipes.
