Baked Codfish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Remove the skin from the codfish and boil it in plenty of cold water until tender.

  2. Drain the water, remove all bones, and flake the fish finely.

Mix and bake

  1. In a bowl, combine the flaked fish, mashed potatoes, sweet cream, butter, and beaten eggs, and mix well.

  2. Transfer to a well-buttered baking dish.

  3. Bake at 350°F (175°C) for about 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm when baked.
Mashed potatoes
Add body and a soft, creamy texture that holds the fish together.
Sweet cream
Adds moisture and richness so the mixture bakes tender rather than dry.
Codfish
Provides the main flavour and protein that the rest of the mixture surrounds.

The step that matters

Flaking the fish finely after boiling. Removing every bone and flaking the fish finely keeps bones out of the mouth and lets the fish blend evenly with the potato and egg, so the bake sets into a uniform texture.

Swap the potato

How well each one fits the dish's main ingredients (cream, butter, egg):

  1. Leekfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits about as well

Fit is the average pairing score against cream, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
