What each ingredient does

Salmon
Provides the main body and flavor of the croquettes.
Seasoned mashed potatoes
Adds bulk and moisture, helping the mixture hold together.
Cracker crumbs
Binds the mixture and forms a crisp coating when fried.
Eggs
Bind the mixture and help the crumb coating stick.

The step that matters

Dip each ball into the beaten eggs, then coat with cracker crumbs.. The egg and crumb coating must fully cover each ball, or it can break apart or soak up fat in the hot lard. Shaping the balls firmly before coating also helps them hold together while frying.
