Scalloped Oysters

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the liquor

  1. Drain the liquor from the oysters into a saucepan and heat it until boiling, then skim off any foam.

  2. Let the liquor cool, then add 1 pint of rich milk.

Layer and bake

  1. In a well-buttered baking dish, layer 1 quart of cracker crumbs, moisten with the oyster liquor mixture, and add a layer of oysters.

  2. Season with coarse sea salt, black pepper, and a generous amount of butter.

  3. Repeat the layering process until the dish is filled.

  4. For the topping, mix 1 beaten egg with 1 cup of milk and any remaining oyster liquor, then pour over the top layer of cracker crumbs.

  5. Cover the dish and bake at 350°F (175°C) for 45 minutes, then uncover and bake for an additional 15 minutes to brown.

What each ingredient does

Oysters
Provide the main flavor and are the central filling of the dish.
Cracker crumbs
Absorb the liquid and give the dish its body and structure between layers.
Egg
Helps the topping set and bind into a custard-like layer.
Rich milk
Adds moisture and richness, softening the crumbs and enriching the sauce.
Butter
Adds fat and richness and helps the top brown during baking.

The step that matters

Uncovering to brown the top. Baking covered first traps steam and keeps the top pale and moist; the uncovered final baking lets surface moisture evaporate so the crumbs and egg mixture can brown.
