Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. Fill a shallow baking dish with fruit and sweeten to taste.

  3. Add 1-2 tablespoons of water if necessary.

  4. If using apples, add a little cinnamon.

Bake

  1. Cover the top with a pie crust and prick it with a fork.

  2. Bake for about 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fruit
Forms the filling and supplies the main flavour and moisture of the pie.
Sugar
Sweetens the fruit and helps draw out juices as it bakes.
Pie crust
Encloses the filling and browns on top as it bakes.

The step that matters

Prick the pie crust with a fork. Pricking lets steam escape from the baking filling so the crust does not puff up and trap moisture underneath, which can leave it soggy.

Swap the apple

How well each one fits the dish's main ingredients (sugar, cinnamon):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Applethe original

Fit is the average pairing score against sugar, cinnamon. Candidates are from the same food group and used in at least 100 recipes.
