Huckleberry Corn Bread

Oven, in the book's wordsA steady oven

Ingredients

Directions

The book says “a steady oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the fruit

  1. Wash and pick over the huckleberries, then drain them in a colander for 10 minutes.

  2. Sprinkle 3 tablespoons of sugar over the huckleberries in a bowl.

Make the batter

  1. In a large bowl, sift together the Indian meal, flour, baking powder, and salt.

  2. Add 3 tablespoons of sugar and the butter pieces to the dry ingredients.

  3. Stir in 1 cup of milk until well mixed, then fold in the huckleberries.

  4. Pour the mixture into a well-buttered shallow tin pan.

Bake

  1. Bake at 350°F (175°C) for 35 to 40 minutes.

What each ingredient does

Huckleberries
Provide the fruit, with moisture and tart flavor that contrast with the sweet cornbread.
White indian meal
Provides the cornmeal base and the coarse, crumbly texture of the cornbread.
All-purpose flour
Gives the batter structure so the bread holds together when baked.
Baking powder
Releases gas during baking so the cornbread rises and becomes light.
Butter
Adds fat for richer flavor and a tender crumb.
Milk
Hydrates the dry ingredients and helps form the batter.
