Oysters Creamed in Peppers

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Heat the oysters in a pot until boiling.

  2. Drain the oysters and reserve the oyster liquor.

  3. In a saucepan, combine the oyster liquor, cream, flour, butter, salt, and pepper.

  4. Cook the mixture until thickened.

  5. Add the oysters to the sauce and mix well.

Stuff and bake

  1. Cut the tops off the bell peppers and remove the stems and seeds.

  2. Fill the bell peppers with the oyster mixture.

  3. Sprinkle the tops with buttered cracker crumbs.

  4. Place the stuffed peppers in a 400°F (200°C) oven and bake until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main briny flavor and a tender, savory filling.
Oyster liquor
Adds concentrated sea flavor and liquid to the sauce.
Cream
Adds richness and a smooth, silky body to the sauce.
Flour
Thickens the liquid into a sauce that holds the filling together.
Butter
Adds fat for richness and a rounded, buttery flavor.
Bell peppers
Serve as edible cups that soften and turn tender in the oven.

The step that matters

Cook the mixture until thickened. Flour only thickens fully once the liquid is hot enough and cooked through. Stopping early leaves a thin sauce that runs out of the peppers and a raw, pasty taste.
