What each ingredient does

Mashed potato
Forms the bulk of the croquette, giving a soft interior that holds its shape.
Egg yolks
Bind the potato mixture and add richness and firmness when heated.
Butter
Adds fat for richer flavor and a softer, more tender texture.

The step that matters

Stir over heat until the mixture leaves the sides of the saucepan. Drying the mixture over heat lets it firm up enough to shape. If it stays wet, the croquettes can slump or burst during frying.
