Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main fruit flavour and body of the sorbet.
Sugar
Sweetens the sorbet and softens its texture once frozen.
Lemon juice
Adds acidity that brightens the sweetness of the pineapple.
Orange juice
Adds citrus acidity and fragrance to the pineapple base.

The step that matters

Scraping and stirring during freezing. Sugar and water form ice crystals as they freeze. Scraping and stirring breaks them up while the mixture firms, keeping the sorbet smooth rather than icy.
