Frozen Fruit

Ingredients

Directions

Prepare the fruit

  1. Slice the bananas and use only the juice and pulp of the oranges.

  2. If using grapes, cut them in half and remove the seeds; if using cherries, leave them whole.

  3. Combine all the fruits and grape juice in a bowl and sweeten to taste.

Freeze

  1. Place the mixture in a freezer without the dasher and pack it in ice and salt.

  2. After 1.5 hours, repack the mixture and continue to repack every 2 hours until ready to serve.

  3. It should be packed for 6 to 8 hours.

What each ingredient does

Bananas
Their starch and pulp give the frozen mixture body and a creamy, soft texture.
Oranges
Their juice and pulp add sweetness and acidity, brightening the frozen fruit.
Lemons
Their juice adds acidity that balances sweetness and keeps the flavour fresh.
Grape juice
Adds liquid and fruity sweetness, helping the mixture freeze to a softer texture.

The step that matters

Repacking the ice and salt. Salt lowers the freezing point of the ice around the container, so the mixture stays cold enough to freeze. Repacking on schedule keeps the ice-salt mix effective, and it prevents large ice crystals from forming in the fruit.

Swap the lemon

How well each one fits the dish's main ingredients (orange, banana, pineapple, grape, sugar):

  1. Vanillafits better
