What each ingredient does

Red peppers
Provide the main vegetable, whose firm flesh softens slightly while holding its shape in the jar.
Vinegar
Acidifies the brine, giving the pickled peppers their tangy flavor and helping preserve them.
Sugar
Balances the vinegar's sharpness, adding sweetness to the pickling liquid.

The step that matters

Packing and covering the peppers with hot pickle mixture. Peppers must be packed tightly and fully covered by the hot brine so no air pockets or exposed pieces remain. Keeping the pieces submerged in acidic liquid limits spoilage and keeps the texture and color even.
