Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the body of the soup and thicken it as they break down.
Milk
Provides the liquid base and creamy texture of the soup.
Butter
Enriches the soup and, with flour, forms the thickening sauce.
Flour
Thickens the butter sauce so the soup becomes smoother and more body.

The step that matters

Adding the milk mixture to the potatoes. Milk heated gently in a double boiler avoids scorching and curdling, and straining through a sieve gives a smooth texture.
