Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the pickle itself, softening and taking on the brine and vinegar flavour as they stand.
Coarse salt
Draws water out of the cucumbers and seasons them during the brining period.
Vinegar
Provides the sour acidity that defines the pickle and helps preserve it.
Green peppers
Add crunch and a mild, grassy flavour to the pickling mix.

The step that matters

Let them stand for 24 hours. The brine must have time to draw water out of the cucumbers and penetrate them. Cutting this short leaves them soft, under-seasoned and less crisp.

Swap the horseradish

How well each one fits the dish's main ingredients (cucumber, pepper, vinegar):

  1. Capsicumfits better
  2. Radishfits better
  3. Mustardfits better
  4. Horseradishthe original

Fit is the average pairing score against cucumber, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
