What each ingredient does

Cucumbers
Provide the crisp, firm base texture of the pickle.
Cauliflower
Adds bulk and a firm, crunchy texture that holds up in brine.
Black mustard seed
Adds pungent, sharp flavour that deepens as the pickle sits.
White mustard seed
Contributes a milder, sharper bite alongside the black seed.
Cider vinegar
Provides the acidity that preserves the vegetables and gives tang.
Turmeric
Colours the pickle a bright yellow.

The step that matters

Soaking in strong brine. Salt draws water out of the vegetables by osmosis, firming them and reducing excess moisture. Too weak a brine or too short a soak leaves them soft, and the later boil and vinegar cannot restore crispness.
