Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and soak up the milk to set a soft, custardy texture.
Apples
Add moisture and tartness that balances the sweetness of the dish.
Sweet milk
Moistens the crumbs and apples and helps bind the pudding as it bakes.
Beef suet
Adds fat that enriches the texture and helps the pudding brown.
Butter
Greases the dish and adds richness to the baked surface.

The step that matters

Dry the bread until crisp. Bread that is still soft will turn gummy when soaked in milk. Fully drying it lets the crumbs absorb liquid and hold a light structure while baking.
