Pound Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, beat the butter and sugar together until creamy.

  2. Add the egg yolks and mix well.

  3. In a separate bowl, beat the egg whites to stiff peaks.

  4. Gently fold the egg whites into the butter mixture.

  5. Gradually add the flour, mixing until just combined.

  6. Fold in the lemon zest, figs, and almonds.

Bake

  1. Pour the batter into a greased loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks add richness and moisture, while whipped whites add structure and lift.
Butter
Fat creamed with sugar gives the cake a tender crumb and rich flavor.
Sugar
Sweetness, and creaming with butter traps air that helps the cake rise and soften.
Flour
Provides the structure that holds the cake together as it bakes.
Figs
Add sweetness and moisture, and soften slightly during baking.
Almonds
Add crunch and a nutty aroma that browns lightly in the oven.

The step that matters

Fold in the egg whites gently. The whipped whites hold trapped air that gives the cake its lift. Vigorous mixing deflates them, leaving a denser, heavier crumb.

Fit is the average pairing score against egg, sugar, butter, flour, fig, almond. Candidates are from the same food group and used in at least 100 recipes.
