Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the bread

  1. Soak the bread crumbs in 1½ cups of milk for 1 hour.

  2. Squeeze the soaked bread crumbs to a pulp.

Make the mixture

  1. Mix the pulp with ½ cup of milk, sugar, raisins, melted butter, and egg yolks.

  2. Beat the egg whites until frothy and fold them into the mixture.

Bake and serve

  1. Pour the mixture into a baking dish and bake at 400°F (200°C) for about 40 minutes.

  2. Serve with wine sauce, hot or cold, according to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Form the body of the pudding and absorb the milk and butter.
Egg yolks
Enrich the custard and help bind the pudding as it sets.
Egg whites
Whipped to froth and folded in, they lighten the texture and help it rise.
Milk
Softens the bread and provides moisture that sets into a custard.
Butter
Adds richness and fat for a tender crumb and flavour.
Sugar
Sweetens the pudding and promotes gentle browning in the oven.

The step that matters

Folding in the beaten egg whites. Whites deflate if stirred hard, losing the air that lightens the pudding. Fold gently with a spatula so the froth stays intact through baking.

Swap the raisin

How well each one fits the dish's main ingredients (bread, milk, sugar, butter, egg):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits about as well
  4. Raisinthe original

Fit is the average pairing score against bread, milk, sugar, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
