Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the lemon rind, lemon juice, egg yolks, butter, sugar, and sweet milk until well combined.

  3. Pour the mixture into pie crusts and bake until set.

Make and finish the meringue

  1. In another bowl, beat the egg whites with sugar until stiff peaks form.

  2. Spread the meringue on top of the baked pies and brown slightly under the broiler.

What each ingredient does

Lemon juice
Provides the sharp acidity that gives the filling its tang.
Egg yolks
Thicken the filling as they set, giving it a rich, custard-like body.
Butter
Adds fat for richness and a smooth, tender texture in the filling.
Egg whites
Whipped with sugar to form a stable, airy meringue topping.
Sugar
Sweetens the filling and helps stabilize the whipped meringue.

The step that matters

Beating the meringue to stiff peaks. Egg whites need to be whipped until stiff peaks form, because the air trapped in the foam gives the meringue its volume. Underwhipped whites deflate and weep, while the sugar added gradually helps the foam hold its shape.
