Why it works: Vanilla and coconut match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,294 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Cocoanut Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the meringue

  1. Beat the egg whites until stiff.

  2. Gradually add the sugar and beat over steam until a crust forms on the bottom and sides.

Shape and bake

  1. Remove from steam and fold in the vanilla, corn starch, and coconut.

  2. Drop small pieces onto buttered baking sheets.

  3. Bake at 400°F (200°C) until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that gives the puffs their light, airy structure.
Ground sugar
Sweetens the mixture and helps stabilise the whipped egg white foam.
Corn starch
Absorbs moisture and helps the puffs hold their shape while baking.
Desiccated coconut
Adds chewy texture and toasty flavour as it browns in the oven.

The step that matters

Beating the sugar over steam. Heating the meringue over steam dissolves the sugar so it stays glossy and stable. If the mixture is not heated enough or is beaten too little, the crust may not form and the puffs can collapse or spread in the oven.

Swap the coconut

How well each one fits the dish's main ingredients (egg, sugar, vanilla, corn):

  1. Coconutthe original
  2. Figfits about as well
  3. Blueberryfits about as well
  4. Cherryfits about as well

Fit is the average pairing score against egg, sugar, vanilla, corn. Candidates are from the same food group and used in at least 100 recipes.
