What each ingredient does

Cucumbers
Provide the crisp, firm body that the brine and vinegar preserve in the finished pickle.
Cauliflower
Adds firm texture and absorbs the seasoned vinegar, giving the mixed pickle its bulk.
Onions
Contribute sweetness and aroma that mellow during soaking and pickling.
Black and white mustard seeds
Add sharp, pungent flavor that deepens as the seeds steep in the vinegar.
Ground mustard
Adds sharpness and helps thicken and flavor the pickling liquid.
Cider vinegar
Provides acidity that preserves the vegetables and gives the pickle its tang.

The step that matters

Soaking in the strong brine. Salt draws water out of the vegetables through osmosis, firming them and keeping them crisp. Draining afterward removes the excess salt and liquid so the vinegar can season the pieces properly.
