Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the crisp, firm vegetable base that holds its texture in the brine.
Cider vinegar
Provides the acidity that preserves the cauliflower and gives the pickle its sharp flavour.
White mustard seed
Adds a pungent, sharp flavour that deepens as the seeds steep in the vinegar.
Coarse sea salt
Seasons the cauliflower during blanching and helps firm its texture.

The step that matters

Blanching the cauliflower. Boiling for only 3 to 5 minutes softens the florets slightly while keeping them firm. Over-boiling makes them mushy, and the vinegar can then not restore their crispness.

Swap the mace

How well each one fits the dish's main ingredients (cauliflower, clove, allspice, ginger, mustard, pepper, cider):
