Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide tartness and moisture that flavour the pudding through the layers.
Bread crumbs
Form the bulk of the pudding and soak up the milk to set into a soft custard-like texture.
Beef suet
Adds fat that enriches the pudding and keeps the crumbs moist as it bakes.
Sweet milk
Moistens the crumbs and apples and sets with heat to bind the pudding.

The step that matters

Pour in the sweet milk and bake until nicely browned. The crumbs need enough liquid to soak through before baking, or dry pockets remain. Browning comes from the sugars and proteins in the milk and bread caramelising in the oven, so watch the colour rather than relying on time alone.

Swap the apple
