Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the bulk and a soft, mealy body to the pudding.
Butter
Adds richness and a smooth, tender texture.
Egg yolks
Enrich the filling and help it set into a custard.
Egg whites
Whipped air lightens the mixture and helps it rise and set.
Sugar
Sweetens the pudding and softens the texture of the eggs.
Lemon
Adds acidity and aroma that brighten the sweet custard.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only when whipped. Folding gently keeps that air in the mixture, so the pudding stays light instead of deflating and turning dense.
