Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provide the main acidity and citrus aroma, with the rind adding fragrant oils.
Sugar
Sweetens the ice and, dissolved in the liquid, lowers its freezing point for a softer texture.
Orange
Adds extra juice and a milder, sweeter citrus flavour alongside the lemon.

The step that matters

Stirring during freezing. Stirring breaks up ice crystals as they form, keeping the ice fine and smooth rather than hard and icy. Skipping the repeated stirring lets large crystals develop.
