Ginger Cake

Oven, in the book's wordsA medium oven

Ingredients

Directions

The book says “a medium oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Scald together the syrup and lard in a saucepan.

  2. Once cool, add baking soda and enough flour to form a dough.

  3. Add ginger to taste.

Shape and bake

  1. Roll out the dough and cut into shapes with a cutter.

  2. Before baking, rub a little syrup over the tops.

  3. Bake in a moderate oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Syrup
Adds sweetness, moisture and a soft, chewy texture to the cake.
Lard
Adds fat that tenderizes the crumb and keeps the cake moist.
Baking soda
Reacts with the acidity in the syrup to help the cake rise and lighten.
Flour
Provides the structure that holds the dough together and sets during baking.
Ginger
Provides the spicy aroma that defines the cake.

The step that matters

Adding the baking soda to the cooled syrup mixture. Baking soda needs an acid to react and release gas for rising. Adding it while the mixture is still hot can cause it to react too early or unevenly, so letting it cool first and mixing it in evenly helps the dough rise consistently.

Swap the ginger

How well each one fits the dish's main ingredients (syrup, flour):

  1. Jalapenofits better
  2. Cinnamonfits better

Fit is the average pairing score against syrup, flour. Candidates are from the same food group and used in at least 100 recipes.
