Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lobster meat
Forms the main filling, giving the croquettes their flavour and body.
Egg
Beaten egg binds the coating so the crumbs stick to each ball.
Cracker crumbs
Form a crisp outer crust that browns when fried.
Lard
Frying fat that conducts heat and browns the crumb coating.

The step that matters

Fry in very hot lard. If the lard is not very hot, the coating absorbs fat and becomes greasy before it browns. Very hot fat sets the crumbs quickly, giving a golden, crisp crust while the filling heats through.

Swap the parsley

How well each one fits the dish's main ingredients (lobster, meat, egg):

  1. Capersfits better
  2. Nutmegfits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against lobster, meat, egg. Candidates are from the same food group and used in at least 100 recipes.
