What each ingredient does

Oysters
Provide the main flavor and tender seafood texture of the stew.
Cream or milk
Adds richness and a mild sweetness that softens the briny oyster flavor.
Butter
Adds fat for a silky mouthfeel and rich, rounded flavor.

The step that matters

Keep the stew at a gentle simmer after adding the oysters. Oysters toughen and shrink when overcooked. Once they are added to the hot liquid, they only need to heat until their edges curl, so a hard boil can make them rubbery. Adding the dairy at the same stage also needs gentle heat to avoid curdling or scorching.

Swap the parsley

How well each one fits the dish's main ingredients (oyster, cream, butter, pepper):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Celeryfits about as well
  4. Tarragonfits less well

Fit is the average pairing score against oyster, cream, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
