What each ingredient does

Cucumbers
Provide the crisp, firm body that the pickle is built around.
Cauliflower
Adds firm texture and bulk that holds up to brining and boiling.
White cabbage
Adds crunch and bulk, absorbing brine flavor during the long soak.
Onions
Add sweetness and aroma that mellow during pickling.
Black mustard seed
Contributes sharp, pungent heat and aroma to the pickling liquid.
Cider vinegar
Provides the acidity that preserves the vegetables and gives tang.

The step that matters

Draining after the brine soak. Vegetables soaked in brine hold a lot of salt and water. Draining and rinsing them well keeps the final pickle from being overly salty and watery, and helps the vinegar penetrate evenly.
