Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the crisp, firm pickled vegetable that absorbs the spiced vinegar.
Cider vinegar
Provides the acidity that preserves and sharpens the pickle.
Coarse sea salt
Seasons the blanching water and helps firm the cauliflower.
White mustard seed
Adds a sharp, pungent flavour that carries through the pickling liquid.

The step that matters

Heating the vinegar a second time. Reheating the drained vinegar before returning it to the cauliflower keeps the brine hot enough to infuse the florets evenly and to help the pickle keep well in storage.

Swap the mace
