What each ingredient does

Veal
Gives the soup its meaty flavor and body as it simmers in water.
Macaroni
Adds starch and bulk, making the soup more filling.
Milk or cream
Adds richness and a softer, smoother mouthfeel to the broth.

The recipe marks celery as optional. How well each one fits the dish's main ingredients (veal, butter, pepper, milk):

  1. Parsleyfits better
