Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, cream the butter and sugar together until smooth.

  3. Add the ground ginger, allspice, coriander seed, salvolatile, and cayenne, mixing well.

  4. Gradually add flour until the dough is firm enough to roll out.

  5. Roll the dough into small balls and pinch them slightly.

  6. Place on a baking sheet and bake for about 10-12 minutes or until golden.
