Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks thicken the sauce as they cook, giving it a smooth, honey-like body.
Butter
Adds richness and a smooth, silky mouthfeel to the sauce.
Sugar
Sweetens the sauce and helps give it a glossy, syrupy texture.
Lemon juice
Adds acidity and bright flavour that balances the sweetness.

The step that matters

Simmering until it thickens. Egg yolks set when heated, so over-high heat or stopping stirring can scramble them or make the sauce burn. Low heat and constant stirring keep it smooth as it thickens.
