Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Oysters on Toast
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Cover the bottom of a dripping pan with toast.
Stew the oysters in their own liquor.
Place the oysters on the toast.
Thicken the liquor with a little flour and season with butter, coarse sea salt, and pepper.
Pour the thickened liquor over the toast.
Cover with a layer of cracker crumbs and dot with small bits of butter.
Brown nicely in a 400°F (200°C) oven and serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
