What each ingredient does

Green peas
Make up the bulk of the dish and supply its main flavour and texture.
Butter
Adds fat and richness, giving the peas a smooth, silky coating.
Sugar
Adds sweetness that older peas have lost as they mature.

The step that matters

Boil the peas for the right time. Young peas are sweet and tender and cook quickly, while full-grown peas have converted more of their sugar to starch and need longer to soften. Undercooked mature peas stay tough and floury, and overcooked young peas turn mushy and dull in colour.

Swap the peas

How well each one fits the dish's main ingredients (butter, sugar):

  1. Almondfits better
  2. Pecansfits better
  3. Filbertfits better
  4. Peasthe original

Fit is the average pairing score against butter, sugar. Candidates are from the same food group and used in at least 100 recipes.
