Lemon Pie

three pies

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Grate the peel of the lemons and squeeze the juice into a bowl.

  2. Add the sugar, melted butter, and egg yolks to the bowl and mix well.

  3. Pour the mixture into pie crusts for three pies.

Make the meringue and bake

  1. Beat the egg whites until soft peaks form.

  2. Gradually add the powdered sugar while continuing to beat until stiff peaks form.

  3. Spread the meringue over the pies and bake in a 350°F (175°C) oven until the meringue is set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and thicken the lemon filling as it sets.
Egg whites
Whipped into a foam that forms the meringue topping.
Sugar
Sweetens the filling and helps stabilise the whipped egg whites.
Lemons
Provide the acidity and aroma of the filling.
Butter
Adds fat for a smooth, rich texture in the filling.

The step that matters

Beating the meringue to stiff peaks. Egg whites need to be whipped until they hold stiff peaks so the meringue stays airy and sets properly. Adding powdered sugar gradually helps keep the foam stable; under-beaten or greasy whites will collapse or weep in the oven.
