Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks, giving the cream its body.
Milk
Forms the liquid base that the tapioca thickens into a custard.
Egg yolks
Enrich and thicken the custard, adding richness and smoothness.
Egg whites
Whipped into a foam that folds in and bakes to a light, browned top.

The step that matters

Letting the custard boil briefly. Tapioca starch must reach a boil to fully thicken and lose its raw taste. Egg yolks can curdle if overheated, so the boil should be brief and the mixture removed promptly.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
