The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm, wobbly jelly when chilled.
Loaf sugar
Adds sweetness and body to the clear liquid.
Lemons
Provide acidity and bright lemon flavour through juice and sliced peel.
Rose water
Adds a delicate floral aroma.

The step that matters

Soaking and dissolving the isinglass. Isinglass must be fully dissolved in the hot liquid before straining; undissolved pieces leave a cloudy or grainy jelly and may not set evenly. Soaking first hydrates it so it dissolves more readily.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, rose):

  1. Vanillafits better
  2. Orangefits about as well
  3. Raspberryfits about as well
  4. Lemonthe original

Fit is the average pairing score against sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
