Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and balances the tartness of the cider and lemon.
New cider
Provides most of the liquid and the main apple flavour.
Lemon
Adds acidity and fresh aroma from the juice and rind.

The step that matters

Dissolve the gelatine in boiling water.. Gelatine must fully dissolve before the other ingredients are added. Undissolved granules can leave lumps or weak patches, so the jelly may set unevenly or not firmly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cider):

  1. Applefits better
  2. Vanillafits better
  3. Pearfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, cider. Candidates are from the same food group and used in at least 100 recipes.
