Ingredients

Directions

The book says “a moderate oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.

  1. Place the egg whites in a shallow dish.

  2. Sprinkle some sugar over the egg whites and beat for about 30 minutes, gradually adding the rest of the sugar.

  3. Flavor the icing with lemon juice, tartaric acid, or fruit juices as desired.

  4. Dredge the cooled cake with flour before icing to prevent running.

  5. Spread the icing on the cake using a large knife dipped in cold water.

  6. Set the frosted cake in a cool, dry place or a moderate oven (350°F) to harden.
