Caramel Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Add the egg whites and mix well.

  4. Stir in the milk, flour, corn starch, baking soda, and cream of tartar until combined.

Make the caramel

  1. For the caramel, combine the brown sugar, chocolate, butter, and milk in a saucepan.

  2. Boil for five minutes, then add vanilla extract.

Bake

  1. Pour the caramel over the cake batter in shallow pans.

  2. Bake until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Provide structure and lift as they set in the oven.
Flour
Forms the main structure of the cake as it sets.
Butter
Adds richness and tenderness to the cake and caramel.
Brown sugar
Gives the caramel its molasses flavour and moisture.
Baking soda
Reacts with acid in the batter to help the cake rise.

The step that matters

Boil the caramel for five minutes. Boiling cooks the sugar and milk to a thick, set caramel. Boiling too briefly leaves it runny, while boiling too long can make it hard or grainy once it cools.
