What each ingredient does

Oatmeal
Its starch swells in the hot water and thickens the liquid into porridge.
Water
Hydrates the oats and cooks them, forming the liquid base of the porridge.

The step that matters

Sprinkling in the oatmeal while stirring. Dry oatmeal dropped into hot water can clump, with outer grains sealing off the inside. Adding it slowly while stirring constantly separates the grains so the starch hydrates and thickens evenly.
