Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Grate the lemons.

  2. In a bowl, cream together the butter and sugar.

  3. Add the egg yolks to the mixture and mix well.

  4. Fold in the grated lemon zest.

Bake and serve

  1. Bake the mixture in a greased dish without a crust at 350°F (175°C) until set.

  2. Whip the reserved egg whites to form a meringue and spread on top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to give the pudding richness and a tender texture.
Sugar
Sweetens the pudding and helps cream with the butter to trap air.
Eggs
Yolks enrich and set the custard; whites whip into the meringue topping.
Lemons
Zest adds bright citrus aroma and flavour to the pudding.

The step that matters

Baking until set. Underbaking leaves the custard runny, while overbaking makes egg proteins tighten and turn the texture grainy or rubbery. Pull it from the oven once the centre is just set.
