Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells and thickens the milk as it cooks, giving the custard its body.
Milk
Forms the liquid base that the starch and egg proteins set into.
Egg yolks
Enrich and thicken the custard as their proteins set with heat.
Egg whites
Beaten to stiff peaks, they add air and lightness to the top.
Sugar
Adds sweetness and helps the top brown lightly in the oven.

The step that matters

Fold the beaten egg whites into the tapioca mixture. Folding gently keeps the air trapped in the whites. Stirring hard deflates the foam, so the baked top becomes dense instead of light.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (milk, egg, sugar):

  1. Vanillafits better
  2. Figfits about as well
  3. Raisinfits about as well
  4. Lemonthe original

Fit is the average pairing score against milk, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
