Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatin-like protein that sets the liquid into a firm jelly when chilled.
Egg whites
Beaten into foam, they lighten the jelly and give it a soft, snowy texture.
Sugar
Sweetens the jelly and adds body to the set mixture.
Lemon juice
Adds acidity that brightens the sweetness and balances the flavor.

The step that matters

Fold the beaten egg whites into the mixture gently. Egg white foam traps air that gives the jelly its light texture. Vigorous stirring deflates the foam, leaving a dense, less airy set jelly.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits about as well
  3. Lemonthe original
  4. Datesfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
