Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Sweetens the jelly and balances the sharpness of the citrus.
Lemon pulp
Adds acidity and bright citrus flavour to the jelly.
Oranges
Provide fruit flavour and pieces suspended in the set jelly.

The step that matters

Dissolving the gelatine fully. Gelatine must be completely dissolved in the hot liquid before cooling; any undissolved granules stay grainy and weaken the set, so stir until no grains remain.
