Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Isinglass
- Gelatin-like protein that dissolves in hot water and sets into a firm jelly as it cools.
- Loaf sugar
- Adds sweetness and body to the jelly.
- Lemons
- Provide juice for acidity and bright flavour, plus slices that flavour the liquid.
- Rose water
- Adds a delicate floral aroma.
The step that matters
Letting the isinglass fully dissolve. Isinglass must dissolve completely in the hot liquid before setting. Undissolved pieces won't firm evenly, leaving the jelly weak or cloudy in spots.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, rose):
- Vanillafits better
- Orangefits about as well
- Raspberryfits about as well
- Lemonthe original
Fit is the average pairing score against sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
