Why it works: Allspice and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 6,395 recipes. Both carry estragole, which smells anise, licorice. The science ↓

What each ingredient does

Beets
Provide the main body and earthy sweetness of the dish once cooked until tender.
Vinegar
Adds acidity that preserves the beets and gives them their sharp, tangy flavour.
Allspice
Contributes warm, aromatic spice flavour that infuses into the pickling liquid.
Whole pepper
Adds aromatic heat and depth to the pickling liquid as it steeps with the beets.

The step that matters

Let the vinegar cool before pouring it over the beets. Pouring hot vinegar over cooked beets can soften them further and cause uneven texture. Letting the liquid cool first keeps the slices firmer and helps the flavour settle evenly.

Swap the allspice

How well each one fits the dish's main ingredients (vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits about as well
  4. Allspicethe original

Fit is the average pairing score against vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
