Brains on Toast

Ingredients

Directions

Prepare the brains

  1. Soak the brains in cold water for 30 minutes, removing any blood clots or loose skin.

  2. Bring a pot of water to a boil, add vinegar or lemon juice, and simmer the brains for 10 minutes.

  3. Drain and chop the brains coarsely, removing the skin.

Make the topping

  1. Toast the bread slices and butter them, keeping them warm.

  2. In a pan, combine the chopped brains, butter, parsley, milk, and beaten egg.

  3. Stir over low heat until heated through, being careful not to let it boil.

Serve

  1. Serve the mixture on the toast, garnished with parsley.

What each ingredient does

Brains
Provide the main protein and the soft, creamy body of the dish.
Egg
Binds the mixture and thickens it gently as it heats.
Milk
Adds moisture and softness, keeping the mixture creamy rather than dry.
Butter
Adds richness and fat, carrying flavour through the mixture and onto the toast.

The step that matters

Stir over low heat without boiling. Egg proteins set and curdle when overheated, so gentle low heat keeps the mixture smooth and creamy rather than grainy or scrambled.

Swap the parsley

How well each one fits the dish's main ingredients (milk, vinegar, butter, egg, pepper):

  1. Tarragonfits about as well
  2. Parsleythe original
  3. Cinnamonfits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against milk, vinegar, butter, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
